Intense dark chocolate

This has a nice raspberry flavor, not too sweet or too tart. The chocolate by itself is not that great. It's a little too dark for me. I like my dark chocolate to be around the 70% range. I have no idea what percentage this is since it doesn't say. I'd guess around 65%. Incredible for homemade truffles!
My grandmother passed this month, and there were two things she always had- chocolate and wine. I enjoy making hommafe truffles, and Ghirardelli bars are my favorite to melt into the cream base. I used to LOVE the Cabernet Matinee Intense Dark, and was wanting to make something similar in truffle-form. I cooked down some grapes from her concord vine, added cream, and melted an Intense Dark Raspberry Chocolate bar into base. After solidifying in the fridge, I rolled the chocolate into little balls. Each one was dusted in lavender-infused sugar and Ghirardelli Dutch Cocoa Powder. These were the best chocolate I ever made.
